Description

A cool, refreshing peppermint fondant center dipped in a snappy dark chocolate coating.


Ingredients

Scale

4 cups powdered sugar, sifted
1/4 cup sweetened condensed milk
1.5 teaspoons peppermint extract
2 teaspoons unsalted butter, softened
12 ounces dark chocolate chips
1 tablespoon coconut oil


Instructions

Step 1: Combine powdered sugar, condensed milk, butter, and peppermint extract in a mixer and beat until a smooth dough forms.
Step 2: Roll the dough between parchment paper to a 1/4 inch thickness.
Step 3: Cut into rounds using a small cookie cutter and place on a lined tray.
Step 4: Freeze the mint rounds for 45 minutes until very firm.
Step 5: Melt the chocolate and coconut oil together in the microwave in short bursts until smooth.
Step 6: Dip the cold mint rounds into the chocolate and place back on the parchment.
Step 7: Chill in the refrigerator until the chocolate has completely set.

Notes

Ensure the centers are completely frozen before dipping to keep the chocolate neat.
