Ingredients
6 cups water
1 (4-inch) piece kombu
1 cup katsuobushi (bonito flakes)
2-3 tablespoons white or yellow miso paste
2 tablespoons soy sauce
1 tablespoon mirin
1 teaspoon fresh ginger, grated
12 ounces fresh ramen noodles
4 hard-boiled eggs, halved
8 ounces sliced cooked pork (chashu) or pan-fried mushrooms
4 green onions, thinly sliced
4 sheets nori, cut into halves
1/2 cup corn kernels
1 tablespoon sesame oil (for drizzling, optional)
Shichimi togarashi (Japanese seven-spice blend, optional)
Instructions
Step 1: Prepare Your Dashi Broth. In a large pot, combine 6 cups of water with a 4-inch piece of kombu. Let it sit for 30 minutes (or longer, up to a few hours for more flavor). Heat the water slowly over medium heat, bringing it to just below a simmer. Remove the kombu just before it boils. Add 1 cup of katsuobushi, remove from heat, and let it steep for 5 minutes. Strain the dashi through a fine-mesh sieve, discarding the solids.
Step 2: Build Your Flavorful Ramen Broth. Return the dashi to the pot over medium heat. Whisk in 2-3 tablespoons of miso paste (adjust to taste), 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 teaspoon of grated fresh ginger. Bring the broth to a gentle simmer, but do not boil, as this can degrade the miso flavor. Taste and adjust seasonings as needed.
Step 3: Prepare Your Toppings. While the broth simmers, prepare your desired toppings. This includes halving the hard-boiled eggs, slicing cooked pork or pan-frying mushrooms, thinly slicing green onions, and having nori and corn ready.
Step 4: Cook the Ramen Noodles. Bring a separate large pot of water to a rolling boil. Cook the fresh ramen noodles according to package directions, usually 1-3 minutes. They should be al dente, firm to the bite. Drain well and rinse briefly under hot water to remove excess starch and prevent sticking.
Step 5: Assemble Your Ramen Bowls. Divide the cooked noodles among four large ramen bowls. Ladle the hot, flavorful broth over the noodles. Arrange your prepared toppings artfully on top (eggs, pork/mushrooms, green onions, nori, corn). For extra richness, drizzle with a touch of sesame oil and sprinkle with a dash of shichimi togarashi if desired. Serve immediately.
Notes
For best results, prepare the dashi ahead of time. Store leftover broth separately from noodles and toppings in airtight containers in the refrigerator for up to 3 days. Reheat broth gently and combine with freshly cooked noodles and toppings.
