Ingredients
1 cup (340g) honey (preferably raw or local)
1-2 tablespoons red pepper flakes (adjust to your heat preference)
1 tablespoon apple cider vinegar
Instructions
Step 1: In a small saucepan, combine the honey, red pepper flakes, and apple cider vinegar.
Step 2: Heat the mixture over low heat, stirring occasionally, for 5-10 minutes. The honey should become warm and fluid, allowing the flavors to infuse, but avoid bringing it to a rolling boil.
Step 3: Remove the saucepan from the heat and let the hot honey cool completely. As it cools, the flavors will continue to meld and deepen.
Step 4: Once cooled, you can strain the hot honey through a fine-mesh sieve into a clean, airtight jar if you prefer a smooth consistency without the chili flakes. Alternatively, you can leave the flakes in for extra texture and heat.
Step 5: Store the homemade hot honey in a sealed jar at room temperature for several months. Do not refrigerate, as this can cause crystallization.
Notes
For a milder heat, use 1 tablespoon of red pepper flakes. For extra heat, increase to 2 tablespoons or add a pinch of cayenne pepper. The apple cider vinegar is crucial for balancing the sweetness and adding a bright tang, so don't omit it!
