Description
A stunning, layered iced coffee drink featuring vibrant purple ube, creamy coconut milk, and bold espresso shots.
Ingredients
2 shots of espresso (about 2 oz)
1 tbsp ube halaya (purple yam jam)
3/4 cup unsweetened coconut milk (from a carton)
1 tsp simple syrup or condensed milk (optional)
1 cup ice cubes
2 drops ube extract (optional for color)
Instructions
Step 1: Brew 2 shots of espresso and let them cool for a few minutes while you prepare the base.
Step 2: In a small bowl, mix the ube halaya with 2 tablespoons of the coconut milk until it forms a smooth, lump-free paste.
Step 3: Add the ube paste to the bottom of a tall glass and stir in the sweetener if you prefer a sweeter drink.
Step 4: Fill the glass with ice cubes almost to the rim.
Step 5: Pour the remaining coconut milk into the glass over the ice, leaving about an inch of space at the top.
Step 6: Slowly pour the espresso shots over the back of a spoon onto the top of the milk to create a layered effect.
Step 7: Serve immediately with a straw and enjoy the beautiful color gradient.
Notes
For a more intense purple color, add a drop of food coloring or extra ube extract to the milk base.
