Ingredients
4 cups all-purpose flour
1 cup granulated sugar (plus extra for coating)
3 large eggs
1/2 cup unsalted butter, softened
1 tablespoon baking powder
Zest of 1 lemon
Zest of 1 orange
1/2 cup Alkermes liqueur (or peach juice with red food coloring)
1 cup Nutella or vanilla pastry cream for filling
20 fresh mint leaves
Instructions
Step 1: Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2: Cream butter and sugar until light and fluffy.
Step 3: Incorporate eggs and citrus zests into the creamed mixture.
Step 4: Fold in flour and baking powder to form a smooth dough.
Step 5: Shape into 40 small walnut-sized balls and bake for 15 minutes.
Step 6: Hollow the flat side of warm cookies with a small spoon.
Step 7: Fill cookies and sandwich them together to form a sphere.
Step 8: Dip the Italian Peach Summer Cookies in liqueur and roll in sugar.
Step 9: Garnish with a mint leaf and chill before serving.
Notes
Hollow the cookies while they are still warm to prevent cracking. Use a small offset spatula for easy filling.
