Description
Tender beef marinated in fiery Jamaican jerk spice, perfectly grilled and served with a refreshing, sweet, and tangy mango salsa.
Ingredients
For the Jerk Beef Skewers:
1.5 lbs beef sirloin or flank steak, cut into 1-inch cubes
2 tbsp olive oil
3 tbsp brown sugar
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 large Scotch bonnet pepper (or jalapeño for less heat), finely minced (wear gloves!)
1/2 onion, chopped
4 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp dried thyme
1 tsp ground allspice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Salt and black pepper to taste
Wooden or metal skewers (soak wooden skewers for 30 minutes)
For the Mango Salsa:
2 ripe mangoes, peeled and diced
1/2 red onion, finely diced
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Pinch of salt
Instructions
Step 1: Prepare the Jerk Marinade: In a blender or food processor, combine olive oil, brown sugar, soy sauce, apple cider vinegar, Scotch bonnet pepper (or jalapeño), chopped onion, garlic, ginger, thyme, allspice, cinnamon, nutmeg, salt, and pepper. Blend until smooth.
Step 2: Marinate the Beef: Place the beef cubes in a large bowl or resealable bag. Pour the jerk marinade over the beef, ensuring all pieces are coated. Cover and refrigerate for at least 2 hours, or preferably overnight, for best flavor.
Step 3: Make the Mango Salsa: In a medium bowl, combine the diced mangoes, red onion, chopped cilantro, minced jalapeño (if using), lime juice, and a pinch of salt. Stir gently to combine. Taste and adjust seasoning if needed. Cover and refrigerate until serving.
Step 4: Prepare Skewers: If using wooden skewers, ensure they have been soaked. Thread the marinated beef cubes onto the skewers, leaving a small space between each piece.
Step 5: Preheat Grill: Preheat your grill to medium-high heat (about 400-450°F or 200-230°C). Lightly oil the grill grates to prevent sticking.
Step 6: Grill Skewers: Place the beef skewers on the hot grill. Cook for 2-3 minutes per side, turning occasionally, until desired doneness is reached (internal temperature for medium-rare is 135°F or 57°C). The beef should have nice char marks.
Step 7: Serve: Remove skewers from the grill and let them rest for a few minutes. Serve hot with a generous spoonful of the refreshing mango salsa.
Notes
For an extra layer of flavor, you can briefly grill some pineapple chunks alongside the beef skewers. If you prefer less heat, remove the seeds and white membrane from the Scotch bonnet or jalapeño pepper, or use a milder pepper like bell pepper in the marinade.
