Description
This easy lemon butter baked cod recipe creates tender, flaky fish in a bright, savory sauce. It's a quick, healthy, and delicious meal perfect for any weeknight.
Ingredients
4 (4-5 oz) cod fillets, fresh or thawed
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/4 cup unsalted butter, melted
3 cloves garlic, minced
1 tablespoon fresh lemon zest (from 1 large lemon)
2 tablespoons fresh lemon juice
1 teaspoon dried dill, or 1 tablespoon fresh chopped dill
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup. If using foil, lightly grease it.
Step 2: Thoroughly pat each cod fillet dry with paper towels on all sides. Season both sides with salt and black pepper. Place the seasoned fish on your prepared baking sheet.
Step 3: In a small bowl, melt the unsalted butter. Add the minced garlic, fresh lemon zest, dried dill (or fresh), and red pepper flakes (if using). Stir well to combine.
Step 4: Stir in the fresh lemon juice into the butter mixture. Taste and adjust seasonings if necessary.
Step 5: Spoon or brush the lemon butter mixture generously over each cod fillet, ensuring an even coating.
Step 6: Bake for 12-18 minutes, or until the cod is opaque throughout and flakes easily with a fork. Cooking times will vary based on fillet thickness.
Step 7: Remove from the oven. Garnish with fresh chopped parsley and an extra squeeze of fresh lemon juice, if desired. Serve immediately.
Notes
For best results, use fresh cod. If using frozen, ensure it is fully thawed and patted very dry before seasoning. Do not overcook the fish; it should flake easily.
