Description
A light, fluffy, and citrusy vintage gelatin salad featuring crushed pineapple, cream cheese, and marshmallows.
Ingredients
2 packages (3 oz each) Lemon flavored gelatin
2 cups boiling water
1 can (20 oz) crushed pineapple, drained (reserve juice)
1 cup cold pineapple juice (supplemented with water if needed)
1 package (8 oz) cream cheese, softened
1 cup mini marshmallows
2 cups whipped topping
Instructions
Step 1: Dissolve the lemon gelatin in boiling water by whisking for 2 minutes.
Step 2: Stir in the cold pineapple juice and water mixture.
Step 3: Beat softened cream cheese until smooth and gradually whisk in 1/2 cup of the gelatin mixture.
Step 4: Combine all gelatin and cream cheese together, then chill for 30-45 minutes until slightly thickened.
Step 5: Fold in the drained pineapple and mini marshmallows.
Step 6: Gently fold in the whipped topping until smooth.
Step 7: Pour into a 9x13 dish and smooth the top.
Step 8: Refrigerate for at least 4 hours or until completely firm.
Notes
Ensure the cream cheese is fully at room temperature to prevent lumps in the final salad.
