Description

1 large head Romaine lettuce, or a mix of spring greens (about 8 cups)
1/4 cup fresh lemon juice (from 1-2 lemons)
1 tsp lemon zest
1/3 cup extra virgin olive oil
1 tsp Dijon mustard
1 clove garlic, minced
1/2 tsp sea salt, or to taste
1/4 tsp freshly ground black pepper, or to taste
1/4 cup shaved Parmigiano-Reggiano cheese, plus more for garnish


Instructions

Step 1: Thoroughly wash and dry your salad greens using a salad spinner or by patting them gently with a clean kitchen towel. Tear larger leaves into bite-sized pieces and place them in a large salad bowl.
Step 2: In a small bowl, combine the fresh lemon juice, lemon zest, extra virgin olive oil, Dijon mustard, minced garlic, sea salt, and black pepper. Whisk vigorously until the dressing is well emulsified and slightly creamy. Taste and adjust seasonings as needed.
Step 3: Pour about two-thirds of the dressing over the prepared greens. Toss gently but thoroughly to ensure every leaf is lightly coated. You can use your hands for this to get an even distribution without bruising.
Step 4: Using a vegetable peeler or microplane, shave a generous amount of fresh Parmigiano-Reggiano cheese over the dressed greens. Give the salad one last gentle toss to distribute the cheese.
Step 5: Serve your lemon parmesan salad immediately. If desired, add more dressing or a sprinkle of additional shaved Parmesan before serving.
