Description
A soft, enriched yeast dough filled with vibrant lemon sugar and topped with a silky cream cheese glaze.
Ingredients
4 cups all-purpose flour
1 cup whole milk, warmed
1/2 cup granulated sugar
2 1/4 tsp active dry yeast
1/2 cup unsalted butter, melted
1 large egg
3 tbsp lemon zest, divided
1/2 cup unsalted butter, softened (for filling)
3/4 cup granulated sugar (for filling)
4 oz cream cheese, softened
1 cup powdered sugar
2 tbsp fresh lemon juice
Instructions
Step 1: In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it bloom for 10 minutes until foamy.
Step 2: In a stand mixer, mix the bloomed yeast, remaining sugar, melted butter, egg, and 1 tablespoon of lemon zest.
Step 3: Gradually add flour and knead for 5-7 minutes until the dough is smooth and elastic.
Step 4: Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled.
Step 5: Roll the dough into a 12x18 inch rectangle on a floured surface. Spread with softened butter.
Step 6: Mix 3/4 cup sugar with 2 tablespoons of lemon zest and sprinkle evenly over the buttered dough.
Step 7: Roll the dough tightly into a log and cut into 12 even pieces. Place in a greased 9x13 baking pan.
Step 8: Cover and let rise for 45 minutes. Bake at 350°F for 20-25 minutes until lightly golden.
Step 9: Whisk cream cheese, powdered sugar, and lemon juice. Frost the rolls while they are still warm.
Notes
For an even stronger citrus punch, add a teaspoon of lemon extract to the glaze.
