Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 jar (10 oz) maraschino cherries, drained, chopped, and patted dry
1/2 cup white chocolate chips (optional)
Instructions
Step 1: Preheat your oven to 350°F and line your baking sheets with parchment paper.
Step 2: In a large mixing bowl, cream the butter and both sugars until light and fluffy.
Step 3: Add the egg and almond extract, beating until the mixture is fully incorporated.
Step 4: Sift in the flour, baking soda, and salt, mixing until a soft dough forms.
Step 5: Carefully fold in the chopped and dried cherries and white chocolate chips with a spatula.
Step 6: Scoop tablespoon-sized balls of dough and place them on the baking sheet.
Step 7: Bake for 10-12 minutes until the edges are set and just turning golden.
Step 8: Let cool on the sheet for several minutes before moving to a wire rack.
