1 large head cauliflower (about 2.5 lbs), cut into florets
4 oz cream cheese, softened

Instructions
Step 1: Prepare the Cauliflower. Start by washing a large head of cauliflower. Remove the outer leaves and cut the cauliflower into florets of roughly equal size. This ensures they cook evenly. Aim for pieces that are about 1-2 inches.
Step 2: Cook the Cauliflower. Place the cauliflower florets in a large pot with just enough water to cover them, or use a steamer basket over boiling water. Cook until the cauliflower is *very* tender. This is crucial for a smooth mash. You should be able to easily pierce the florets with a fork. Depending on size, this usually takes about 10-15 minutes if boiling, or 15-20 minutes if steaming. Don't rush this step!
Step 3: Drain Thoroughly. Once tender, drain the cauliflower exceptionally well. You can place it in a colander and let it sit for a few minutes, even pressing gently with the back of a spoon to release excess water. For an even drier result, you can transfer the drained cauliflower back to the empty, hot pot over low heat for 2-3 minutes, stirring occasionally, to evaporate any remaining moisture.
Step 4: Mash the Cauliflower. Transfer the hot, drained cauliflower to a large mixing bowl. Add the softened cream cheese, butter, and half of the sour cream. Season generously with salt and black pepper to taste. If using, add the garlic powder. Now, it's time to mash! For the smoothest possible texture, use an immersion blender or a food processor and pulse until smooth. For a slightly chunkier texture, a regular potato masher will do the trick. Mash until your desired consistency is reached.
Step 5: Adjust and Serve. Stir in the remaining sour cream. Taste and adjust seasonings as needed. You might want a little more salt, pepper, or even a dash of garlic powder for extra flavor.
