A hearty, cheesy ground beef and tater tot casserole designed for easy holiday weekend hosting.
Ingredients
2 lbs ground beef (80/20 blend)
1 large white onion, diced
1 red bell pepper, diced
4 cloves garlic, minced
2 cans (10.5 oz each) condensed cream of mushroom soup
1/2 cup whole milk
1 cup frozen sweet corn
2 cups shredded sharp cheddar cheese
1 bag (32 oz) frozen tater tots
1 tsp smoked paprika
Salt and black pepper to taste
Instructions
Step 1: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Step 2: Brown the ground beef in a large skillet over medium-high heat until fully cooked; drain excess fat.
Step 3: Add the diced onion and red bell pepper to the skillet, sautéing until softened (about 5 minutes).
Step 4: Stir in the minced garlic and cook for 1 minute until fragrant.
Step 5: In a large bowl, mix the beef mixture with the condensed soups, milk, corn, paprika, salt, and pepper.
Step 6: Transfer the mixture to the baking dish, sprinkle with shredded cheese, and top with an even layer of tater tots.
Step 7: Bake for 40-45 minutes until the tots are crispy and golden and the sauce is bubbling.
Notes
For a spicy kick, add diced pickled jalapeños to the beef mixture. Ensure the tater tots are frozen when placed on top for the best crunch.
