An incredibly soft and juicy tropical cake topped with a velvety cream cheese and pineapple juice frosting.
Ingredients
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
20 oz crushed pineapple with juice (undrained)
8 oz cream cheese, softened (for frosting)
1/2 cup unsalted butter, softened (for frosting)
4 cups powdered sugar (for frosting)
3 tbsp pineapple juice (reserved from the can)
1 tsp vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
Step 2: Whisk the flour, baking powder, and baking soda in a medium bowl.
Step 3: Cream the 1/2 cup butter and 1 1/2 cups granulated sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, followed by the undrained crushed pineapple.
Step 5: Gradually stir in the dry ingredients until just combined.
Step 6: Bake for 30-35 minutes or until a toothpick comes out clean.
Step 7: For the frosting, beat the cream cheese, butter, powdered sugar, vanilla, and reserved juice until smooth.
Step 8: Spread frosting over the completely cooled cake.
Notes
Ensure the pineapple is not drained to maintain the moisture levels of the sponge.
