Description

8 oz fresh morel mushrooms, cleaned and patted dry
4 tbsp unsalted butter, divided
1 large shallot, finely minced
2 cloves garlic, minced
1/4 cup dry white wine or chicken broth (optional)
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
1 tsp fresh tarragon, chopped
Salt to taste
Freshly ground black pepper to taste
1 tsp fresh lemon juice (optional, for finishing)


Instructions

Step 1: Thoroughly clean the morel mushrooms. Gently brush off any visible dirt. For a deeper clean, soak them briefly in cold, salted water for 5-10 minutes, then remove and pat them completely dry with paper towels. Halve larger morels lengthwise.
Step 2: In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the minced shallot and cook until translucent and fragrant, about 2-3 minutes. Do not let them brown.
Step 3: Add the minced garlic to the skillet and cook for another minute until aromatic. Be careful not to burn the garlic.
Step 4: (Optional) Pour in the dry white wine or chicken broth. Bring to a gentle simmer and let it reduce by half, scraping up any browned bits from the bottom of the pan. This will take about 2-3 minutes.
Step 5: Increase the heat to medium-high. Add the prepared morels to the skillet in a single layer. If necessary, work in batches to avoid overcrowding the pan, which would steam rather than sear them.
Step 6: Sear the morels for 3-5 minutes per side, turning occasionally, until they are golden brown and slightly tender. Season lightly with salt and freshly ground black pepper as they cook.
Step 7: Reduce the heat to low. Add the remaining 2 tablespoons of unsalted butter and the fresh chopped parsley, chives, and tarragon to the pan. Swirl the pan gently as the butter melts, coating the morels and forming a luscious herb butter sauce.
Step 8: Taste the sauce and morels, then adjust seasoning with additional salt and pepper if needed. A squeeze of fresh lemon juice can be added at this stage to brighten the flavors.
Step 9: Serve the pan-seared morels immediately, spooning the herb butter sauce generously over each serving. Enjoy this truly special dish!

Notes

Ensure morels are thoroughly cleaned and completely dry before searing for best results. Do not overcrowd the pan. The dry white wine or chicken broth is optional but adds a layer of depth to the sauce.
