Description
These delightful no bake Christmas almond balls are a festive, easy-to-make treat perfect for holiday gatherings, cookie exchanges, or a sweet gift. Rich in almond flavor and coated in powdered sugar, they melt in your mouth.
Ingredients
2 cups blanched almond flour
1/2 cup powdered sugar, plus more for dusting
1/4 cup unsalted butter, softened
1/4 cup cream cheese, softened
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Pinch of salt
Optional: 1/4 cup finely chopped toasted almonds (for texture)
Optional: 1-2 tablespoons milk or cream (if mixture is too dry)
Instructions
Step 1: In a large mixing bowl, combine the blanched almond flour, 1/2 cup powdered sugar, and a pinch of salt. Whisk briefly to combine and remove any lumps.
Step 2: Add the softened unsalted butter and softened cream cheese to the dry ingredients. Mix with a spoon or your hands until well combined and a crumbly mixture forms.
Step 3: Add the vanilla extract and almond extract. Continue mixing until the dough comes together and is smooth. If the mixture appears too dry, add milk or cream one tablespoon at a time until it reaches a rollable consistency. If using, fold in the finely chopped toasted almonds at this stage.
Step 4: Cover the bowl and chill the dough in the refrigerator for at least 30 minutes. This will make it easier to roll and help the balls hold their shape.
Step 5: Once chilled, take small portions of the dough (about 1 tablespoon each) and roll them into smooth, bite-sized balls between your palms. Place the rolled balls on a parchment-lined baking sheet or plate.
Step 6: Place about 1/2 cup of powdered sugar in a shallow bowl. Roll each almond ball generously in the powdered sugar until fully coated. For an extra snowy effect, you can roll them a second time just before serving.
Step 7: Transfer the finished no bake Christmas almond balls to an airtight container. Store them in the refrigerator for at least 1 hour (or up to a week) to allow the flavors to meld and the texture to firm up. Enjoy your delicious no bake Christmas almond balls!
Notes
For best results, use blanched almond flour for a smoother texture. These balls are excellent for make-ahead holiday preparations, as they store well in an airtight container in the refrigerator for up to a week. To ensure maximum freshness and prevent them from drying out, consider storing them in quality glass food storage containers.
