Description

Instructions

Step 1: In a large mixing bowl, combine the blanched almond flour, 1/2 cup powdered sugar, and a pinch of salt. Whisk briefly to combine and remove any lumps.
Step 2: Add the softened unsalted butter and softened cream cheese to the dry ingredients. Mix with a spoon or your hands until well combined and a crumbly mixture forms.
Step 3: Add the vanilla extract and almond extract. Continue mixing until the dough comes together and is smooth. If the mixture appears too dry, add milk or cream one tablespoon at a time until it reaches a rollable consistency. If using, fold in the finely chopped toasted almonds at this stage.
Step 4: Cover the bowl and chill the dough in the refrigerator for at least 30 minutes. This will make it easier to roll and help the balls hold their shape.
Step 5: Once chilled, take small portions of the dough (about 1 tablespoon each) and roll them into smooth, bite-sized balls between your palms. Place the rolled balls on a parchment-lined baking sheet or plate.
