Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
3 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1/4 cup heavy cream (optional for ganache style)

Instructions
Step 1: Prepare a 24-cup mini muffin tin by lightly spraying with non-stick cooking spray.
Step 2: In a large bowl, mix the graham cracker crumbs with the melted butter until the mixture looks like wet sand.
Step 3: Place the mini marshmallows in a microwave-safe bowl and heat for 45-60 seconds until they are puffed and soft.
Step 4: Stir the marshmallows into the graham cracker mixture until a thick, sticky dough forms.
Step 5: Press about a tablespoon of the mixture into each muffin cup, using a damp thumb or spoon to create a small well in the center.
Step 6: Melt the chocolate chips in the microwave in 20-second bursts, stirring until smooth. Spoon the chocolate into the wells of each bite.
Step 7: Chill the No Bake S’mores Bites in the refrigerator for at least 30 minutes before serving.
Notes
For an extra toasted flavor, use a kitchen torch to lightly brown the tops of the marshmallows before adding the chocolate layer.
