Description

A delightful layered no-bake dessert featuring a buttery graham cracker crust, a creamy cheesecake-like filling, and a fresh strawberry-gelatin topping. Perfect for summer and easy entertaining!


Ingredients

1½ cups graham cracker crumbs (about 10-12 full sheets)
¼ cup granulated sugar
½ cup unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
1½ cups powdered sugar
1 teaspoon vanilla extract
Pinch of salt
1 (8 ounce) container whipped topping, divided (like Cool Whip), thawed
1 (3 ounce) package strawberry flavored gelatin
1 cup boiling water
½ cup cold water
2 cups fresh strawberries, hulled and sliced


Instructions

Step 1: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until crumbs are moistened.
Step 2: Press the crumb mixture evenly into the bottom of a 9x13 inch baking dish. Freeze for 10-15 minutes while preparing the filling.
Step 3: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
Step 4: Add the powdered sugar, vanilla extract, and salt to the cream cheese. Beat until well combined and fluffy, scraping down the sides as needed.
Step 5: Gently fold 1 cup of the thawed whipped topping into the cream cheese mixture until just combined. Do not overmix.
Step 6: Spread the cream cheese mixture evenly over the chilled graham cracker crust. Refrigerate for at least 30 minutes to firm up.
Step 7: In a separate bowl, whisk the strawberry gelatin powder with 1 cup of boiling water until completely dissolved. Stir in 1/2 cup of cold water. Let it cool completely to room temperature, but do not let it set.
Step 8: Gently fold the sliced fresh strawberries into the cooled gelatin mixture.
Step 9: Carefully pour the strawberry and gelatin mixture over the chilled cream cheese layer in the baking dish. Spread it gently to cover the entire surface.
Step 10: Return the no bake strawberry lasagna to the refrigerator and chill for a minimum of 4-6 hours, or preferably overnight, until all layers are firmly set.
Step 11: Before serving, spread the remaining whipped topping evenly over the strawberry layer. Garnish with additional fresh strawberry slices or whole strawberries, if desired. Slice and serve cold.

Notes

For best results, ensure cream cheese is at room temperature for a smooth filling. Chilling the dessert overnight allows all layers to set perfectly for clean, beautiful slices. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
