Description

A comforting and wholesome make-ahead breakfast bake packed with fiber-rich oats, sweet apples, and warming cinnamon. Perfect for cozy mornings or healthy meal prep.

Ingredients

Scale

2 cups old-fashioned rolled oats
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
Pinch ground nutmeg (optional)
2 cups diced apples (about 2 medium apples, e.g., Honeycrisp, Granny Smith)
2 large eggs
2 cups milk (dairy or non-dairy)
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
2 tablespoons maple syrup or honey (optional, for extra sweetness)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or 9x9 inch baking dish.
Step 2: In a large mixing bowl, combine the old-fashioned rolled oats, brown sugar, cinnamon, baking powder, salt, and nutmeg (if using). Whisk until well combined.
Step 3: Add the diced apples to the dry oat mixture and toss gently to coat.
Step 4: In a separate medium bowl, whisk together the eggs, milk, melted butter, vanilla extract, and maple syrup (if using).
Step 5: Pour the wet ingredient mixture over the apple-oat mixture. Stir everything together until just combined. Do not overmix.
Step 6: Transfer the mixture to the prepared baking dish, spreading it evenly. If desired, sprinkle an extra pinch of cinnamon or brown sugar on top.
Step 7: Bake for 35-45 minutes, or until the top is golden brown and the center is set and firm. A knife inserted into the center should come out mostly clean.
Step 8: Remove from the oven and let cool for 10-15 minutes before serving. Serve warm with desired toppings.

Notes

For best results, use old-fashioned rolled oats rather than quick-cooking oats. This recipe can be assembled the night before; cover and refrigerate, then bake as directed (you might need an extra 5-10 minutes if baking from cold).
