Description

A deliciously easy and flavorful one-pan meal featuring tender chicken thighs and roasted potatoes coated in a sweet and savory honey garlic glaze. Perfect for busy weeknights!

1.5 lbs bone-in, skin-on chicken thighs
1.5 lbs baby potatoes (red or Yukon Gold), quartered or halved if large
1/2 cup honey
1/4 cup soy sauce (low sodium preferred)
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger (optional)
1/2 teaspoon black pepper
Salt to taste
Fresh parsley or green onions, chopped, for garnish (optional)


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easier cleanup.
Step 2: In a medium bowl, whisk together the honey, soy sauce, minced garlic, olive oil, rice vinegar, ginger (if using), and a pinch of salt and black pepper. This forms your honey garlic marinade.
Step 3: Pat the chicken thighs dry with paper towels. In a large bowl, combine the chicken thighs and chopped potatoes. Pour about half of the honey garlic marinade over them and toss well to ensure everything is evenly coated. Reserve the remaining marinade for basting.
Step 4: Arrange the chicken and potatoes in a single layer on the prepared baking sheet, ensuring there's some space between each piece for optimal roasting and caramelization.
Step 5: Bake for 20 minutes. Then, remove the pan from the oven, carefully flip the chicken and potatoes, and baste with some of the reserved marinade. Return to the oven and continue baking for another 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the potatoes are tender and golden brown.
Step 6: For an extra crispy and caramelized finish, you can switch the oven to broiler for the last 2-3 minutes, watching very carefully to prevent burning. Garnish with fresh chopped parsley or green onions if desired, and serve your incredible one pan honey garlic chicken and potatoes immediately.

Notes
