Description

A deliciously easy and satisfying one-pan meal featuring savory kielbasa, tender roasted potatoes, and colorful bell peppers, all seasoned to perfection.

1.5 lbs (about 680g) small Yukon Gold or red potatoes, cut into 1-inch pieces
1 lb (about 450g) smoked kielbasa sausage, sliced into 1/2-inch thick rounds
1 large bell pepper (any color), cored and cut into 1-inch pieces
1 medium yellow onion, cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon dried thyme (optional)
Salt to taste (start with 1/2 teaspoon)


Instructions

Step 1: Preheat your oven to 400°F (200°C). For optimal results and easier cleanup, line a large rimmed baking sheet with parchment paper or aluminum foil. This will prevent sticking and make the roasting process smoother.
Step 2: In a very large bowl, combine the cut potatoes, sliced kielbasa, bell pepper pieces, and onion pieces. Ensure all ingredients are evenly distributed.
Step 3: Drizzle the mixture with olive oil. Add the smoked paprika, garlic powder, onion powder, black pepper, dried thyme (if using), and salt. Toss everything together thoroughly until all the potatoes, sausage, and vegetables are well coated with the oil and seasonings. Make sure every piece gets some flavor!
Step 4: Spread the mixture onto the prepared baking sheet in a single layer. It's crucial not to overcrowd the pan, as this can steam the vegetables instead of roasting them, leading to a less crispy result. If your pan seems too full, use a second baking sheet.
Step 5: Bake for 25-35 minutes, or until the potatoes are tender and lightly browned, and the kielbasa is slightly crispy around the edges. About halfway through the cooking time (around 15-20 minutes), carefully remove the pan from the oven and give everything a good stir with a spatula. This helps ensure even cooking and browning on all sides. Return to the oven to finish cooking.
Step 6: Once cooked, remove the baking sheet from the oven. Serve immediately. This delicious one pan kielbasa and potatoes is best enjoyed fresh, but leftovers are also fantastic.

Notes

For extra flavor, you can finish the dish with a sprinkle of fresh chopped parsley or chives before serving. You can also add a splash of balsamic vinegar or a squeeze of lemon juice at the end for brightness.
