Description

4 (6 oz / 170g) salmon fillets, skin on or off
2 medium zucchini (about 1.5 lbs / 680g), cut into 1/2-inch thick half-moons
2 tbsp olive oil, plus more for drizzling
3 cloves garlic, minced
1 large lemon, half sliced, half for juice
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: In a large bowl, combine the chopped zucchini, 1 tablespoon of olive oil, minced garlic, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss well until the zucchini is evenly coated.
Step 3: Arrange the seasoned zucchini in a single layer on one side of the prepared baking sheet. Ensure there's space for the salmon.
Step 4: Pat the salmon fillets dry with paper towels. Season both sides of the salmon with the remaining 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
Step 5: Place the seasoned salmon fillets on the other side of the baking sheet, alongside the zucchini.
Step 6: Drizzle the remaining 1 tablespoon of olive oil over the salmon. Scatter the fresh dill and parsley evenly over both the salmon and the zucchini.
Step 7: Arrange the lemon slices over and around the salmon and zucchini. Squeeze the juice from the remaining lemon half over the entire dish.
Step 8: Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F/63°C), and the zucchini is tender-crisp.
Step 9: Remove the sheet pan from the oven. Garnish with additional fresh herbs if desired. Serve immediately and enjoy your delicious one pan lemon herb salmon and zucchini!

Notes

For extra crispy zucchini, you can roast the zucchini for 5-7 minutes before adding the salmon to the pan. This gives the zucchini a head start and helps it achieve a more tender-crisp texture.
