Description
Crispy French choux pastry shells filled with vanilla cream and decorated with festive red, white, and blue glazes.
Ingredients
1 cup water
1/2 cup unsalted butter
1/4 tsp salt
1 tbsp granulated sugar
1 cup all-purpose flour
4 large eggs, room temperature
2 cups whole milk
1/2 cup granulated sugar (for filling)
4 large egg yolks
1/4 cup cornstarch
2 tsp vanilla extract
2 cups powdered sugar
3 tbsp milk (for glaze)
Red and Blue gel food coloring
1/2 cup fresh blueberries and strawberries
Instructions
Step 1: Preheat oven to 400°F and line a baking sheet with parchment paper.
Step 2: Boil water, butter, salt, and sugar in a saucepan. Stir in flour all at once until a dough ball forms.
Step 3: Cook dough for 2 minutes, then cool slightly. Beat in eggs one at a time until glossy.
Step 4: Pipe 4-inch logs onto the sheet. Bake for 15 mins at 400°F, then 20 mins at 350°F.
Step 5: Poke holes in shells to release steam and cool completely.
Step 6: Prepare pastry cream by tempering egg yolks with hot milk and sugar; cook until thick, then chill.
Step 7: Pipe filling into shells, dip in red, white, and blue glazes, and garnish with berries.
Notes
Ensure the shells are completely dry before filling to prevent sogginess. Use gel coloring for the brightest red and blue hues.
