Description

A refreshing summer peach salad featuring sweet peaches, tangy goat cheese, peppery arugula, crunchy pecans, and a vibrant honey-lime vinaigrette. Perfect as a light meal or an elegant side.


Ingredients

5 oz (140g) baby arugula
3 ripe peaches, pitted and sliced
4 oz (115g) goat cheese, crumbled
1/4 cup red onion, thinly sliced
1/2 cup pecan halves, lightly toasted
1/4 cup extra virgin olive oil
2 tbsp fresh lime juice
1 tbsp honey
1 tsp Dijon mustard
1/4 tsp sea salt
1/8 tsp black pepper


Instructions

Step 1: In a small bowl or jar, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined and emulsified. Set aside.
Step 2: If not already toasted, place pecan halves in a dry skillet over medium heat. Toast for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Let them cool completely.
Step 3: In a large salad bowl, gently combine the baby arugula, thinly sliced red onion, and crumbled goat cheese.
Step 4: Just before serving, add the sliced peaches and cooled toasted pecans to the salad bowl.
Step 5: Drizzle about half of the honey-lime vinaigrette over the salad. Gently toss to combine, ensuring all ingredients are lightly coated. Add more dressing to taste if desired.
Step 6: Serve immediately and enjoy the fresh flavors of this delightful peach salad!

Notes

For the best flavor and texture, use ripe but firm peaches. If you can't find fresh peaches, high-quality canned peaches (drained well) can be used as a substitute, though fresh is always preferred. This salad is best served immediately after dressing.
