Description
A thick and chewy peanut butter cookie loaded with chocolate chips and a hidden molten caramel center.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg, room temperature
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup semi-sweet chocolate chips
24 soft caramel squares, unwrapped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Step 2: In a large bowl, cream the butter, peanut butter, and both sugars together until smooth and fluffy.
Step 3: Mix in the egg and vanilla extract until fully combined.
Step 4: In a medium bowl, whisk together the flour, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
Step 6: Scoop about 1.5 tablespoons of dough, flatten it in your palm, place a caramel square in the middle, and wrap the dough around it completely.
Step 7: Place the balls on the baking sheets and bake for 10-12 minutes. Let cool for 5 minutes on the sheet before transferring to a wire rack.
Notes
Ensure the caramels are soft and the dough is chilled for at least 30 minutes to prevent the caramel from leaking during the baking process.
