Ingredients
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup creamy peanut butter
1 1/2 cups granulated sugar
1/2 cup light brown sugar, packed
3 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup whole milk
1 cup fruit jam or preserves
Instructions
Step 1: Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
Step 2: Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
Step 3: Cream butter, peanut butter, and sugars until light and fluffy (about 4 minutes).
Step 4: Add eggs one at a time, followed by vanilla extract, mixing well.
Step 5: Alternately add dry ingredients and milk to the butter mixture, starting and ending with flour.
Step 6: Bake for 30-35 minutes or until a toothpick comes out clean.
Step 7: Cool completely before layering with jam and frosting.
Notes
Ensure the cake is fully cooled before applying jam to prevent it from soaking in too deeply and making the sponge soggy.
