Instructions

Step 1: Prepare the Prickly Pears: Wearing thick gloves or using tongs, hold each prickly pear over an open flame (like a gas burner) and rotate it to singe off the tiny spines (glochids). Alternatively, scrub them vigorously under running water with a stiff brush. Once spines are removed, carefully slice off both ends of each fruit. Make a shallow lengthwise slit through the skin and peel it back. Discard the skins.
Step 2: Blend the Fruit: Cut the peeled prickly pears into chunks and place them in a blender. Add 1 cup of cold water to the blender. Blend until completely smooth. The mixture will be thick and contain small seeds.
Step 3: Strain the Mixture: Place a fine-mesh sieve over a large pitcher or bowl. Pour the blended prickly pear mixture into the sieve.
