Description

An incredibly simple and delicious pulled bbq chicken recipe for crock pot, perfect for busy weeknights, meal prep, or feeding a crowd. Tender chicken slow-cooked in a tangy, sweet, and smoky BBQ sauce.


Ingredients

2 lbs boneless, skinless chicken breasts or thighs (or a mix)
1 large onion, chopped
3 cloves garlic, minced
1.5 cups your favorite BBQ sauce
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
Hamburger buns, for serving
Coleslaw, for serving (optional)
Pickle slices, for serving (optional)


Instructions

Step 1: Place the chicken breasts or thighs at the bottom of your slow cooker.
Step 2: Sprinkle the chopped onion and minced garlic over the chicken. Season evenly with smoked paprika, chili powder, salt, and black pepper.
Step 3: In a small bowl, whisk together the BBQ sauce, apple cider vinegar, and Worcestershire sauce. Pour this mixture over the chicken, ensuring it's well coated.
Step 4: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is incredibly tender and easily shreds with a fork.
Step 5: Carefully remove the cooked chicken from the slow cooker to a large cutting board or shallow dish. Using two forks, shred the chicken into bite-sized pieces.
Step 6: Return the shredded chicken to the slow cooker, stirring it into the remaining BBQ sauce until thoroughly coated. Let it warm through on the 'warm' setting for an additional 15-30 minutes to allow the flavors to meld further.
Step 7: Serve the hot pulled BBQ chicken on toasted hamburger buns, optionally topped with coleslaw and pickle slices. Enjoy!
