Ingredients
1 cup fresh raspberries
1 cup canned coconut cream
2 cups pineapple juice
2 cups crushed ice
1 tablespoon honey or agave syrup
Fresh mint for garnish (optional)
Instructions
Step 1: Puree the raspberries in a blender and strain through a sieve to remove seeds.
Step 2: Clean the blender and combine coconut cream, pineapple juice, honey, and ice.
Step 3: Blend on high until the mixture is thick and frothy.
Step 4: Pour the coconut mixture into two chilled glasses.
Step 5: Drizzle the raspberry puree over the top and swirl gently with a spoon.
Step 6: Garnish with extra raspberries or a pineapple wedge and serve immediately.
Notes
Use frozen raspberries for a thicker consistency. For an adult version, add 2 oz of rum.
