1 1/2 cups fresh rhubarb, trimmed and diced (1/2-inch pieces)
2 tablespoons turbinado sugar (for topping, optional)


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease generously.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. Set aside.
Step 3: In a separate medium bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined. Be careful not to overmix; a few lumps are fine.
Step 5: Gently fold in the diced fresh rhubarb until evenly distributed throughout the batter.
Step 6: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
