Description

A sweet, tart, and vibrant pink sauce made with fresh spring rhubarb and aromatic vanilla.

Ingredients

Scale

4 cups rhubarb, chopped into 1/2-inch pieces
1 cup granulated sugar
1/4 cup water
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon (optional)

Instructions

Step 1: Wash and trim the rhubarb, then chop the stalks into 1/2-inch pieces.
Step 2: Combine rhubarb, sugar, and water in a medium saucepan over medium heat.
Step 3: Bring the mixture to a boil, then reduce heat to a low simmer.
Step 4: Simmer for 10-15 minutes, stirring occasionally, until the rhubarb breaks down and the sauce thickens.
Step 5: Remove from heat and stir in the vanilla and cinnamon.
Step 6: Let cool completely before transferring to a storage container.

Notes

For a deeper red color, use stalks that are dark red all the way through. If using green rhubarb, the sauce will be delicious but green in color.
