A sweet and savory side dish featuring caramelized root vegetables tossed in a rich maple syrup and herb glaze.
Ingredients
1 lb carrots, peeled and sliced into 3-inch batons
1 lb parsnips, peeled and sliced into 3-inch batons
3 tbsp pure maple syrup
2 tbsp olive oil
1 tsp fresh thyme leaves
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp chopped fresh rosemary
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large mixing bowl, combine the olive oil, maple syrup, thyme, rosemary, salt, and pepper. Whisk until well combined.
Step 3: Add the prepared carrots and parsnips to the bowl. Toss thoroughly to ensure every vegetable piece is coated in the glaze.
Step 4: Spread the vegetables in a single layer on the prepared baking sheet. Ensure they are not overlapping to allow for proper roasting.
Step 5: Roast in the center of the oven for 30 to 40 minutes. Halfway through the cooking time, use a spatula to toss the vegetables for even browning.
Step 6: Remove from the oven once the roasted carrots and parsnips with maple glaze are tender and have caramelized dark edges.
Step 7: Transfer to a serving dish and garnish with extra fresh herbs if desired. Serve warm.
Notes
Ensure all vegetables are cut to a similar thickness to avoid some pieces burning while others remain hard.
