4 (6-oz/170g) salmon fillets, skin on or off
2 tablespoons olive oil or melted unsalted butter
2 cloves garlic, minced
1 tablespoon fresh lemon juice
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1/2 teaspoon sea salt, plus more to taste
1/4 teaspoon black pepper, plus more to taste
1/4 teaspoon garlic powder
1 small lemon, thinly sliced, for garnish


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Step 2: In a small bowl, combine the olive oil (or melted butter), minced garlic, fresh lemon juice, chopped dill, chopped parsley, and chopped chives. Whisk until well combined. Season with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
Step 3: Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet. Season both sides of the salmon with the remaining 1/4 teaspoon sea salt, 1/8 teaspoon black pepper, and garlic powder.
Step 4: Spoon or brush the herb-oil mixture generously over the top of each salmon fillet, ensuring an even coating. Place a few thin slices of lemon on top of each fillet.
Step 5: Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of your fillets (typically 10 minutes per inch of thickness).
Step 6: Remove from the oven and let rest for 2-3 minutes before serving. Garnish with extra fresh herbs and fresh lemon wedges, if desired. Serve warm.

Notes

For best results, use fresh, high-quality salmon fillets. Adjust baking time based on the thickness of your salmon. This recipe is also great for meal prepping; leftovers store well in the fridge for up to 3 days.
