A zesty, one-pan Mexican-inspired chicken dish that is perfect for busy weeknights and healthy meal prepping.
Ingredients
1.5 lbs boneless skinless chicken breasts
16 oz jar high-quality salsa verde
1 medium white onion, diced
3 cloves garlic, minced
1 tsp ground cumin
1 tbsp olive oil
1/2 cup fresh cilantro, chopped
1 fresh lime, cut into wedges
Salt and black pepper to taste
Instructions
Step 1: Season the chicken breasts on both sides with salt, pepper, and cumin.
Step 2: Heat olive oil in a large skillet over medium-high heat and sear chicken for 4 minutes per side.
Step 3: Remove chicken and sauté onions and garlic in the same pan until soft and fragrant.
Step 4: Pour in the salsa verde and bring to a light simmer, scraping the bottom of the pan.
Step 5: Add the chicken back into the pan, cover with a lid, and cook for 12-15 minutes until internal temperature reaches 165°F.
Step 6: Remove from heat, let rest for 5 minutes, and garnish with fresh cilantro and lime juice before serving.
Notes
Try shredding the chicken directly in the sauce for a great taco filling!
