Ingredients
2 lbs beef chuck roast or stew meat, cut into 1-1.5 inch cubes
1 tbsp olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
16 oz cremini mushrooms, sliced thickly
2 cups beef broth (low sodium)
1 tbsp Worcestershire sauce
1 tbsp tomato paste (optional, for deeper flavor)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried thyme
Salt and freshly ground black pepper to taste
2 bay leaves
2 tbsp cornstarch (for thickening, optional)
2 tbsp cold water (for cornstarch slurry, optional)
Fresh parsley, chopped (for garnish)
Instructions
Step 1: Pat the beef cubes dry with paper towels and season generously with salt and pepper.
Step 2: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Working in batches, brown the beef on all sides until deeply colored. Remove beef and set aside.
Step 3: If desired, add a splash of beef broth to the skillet to deglaze, scraping up any browned bits. Pour this liquid into the slow cooker.
Step 4: Add the browned beef, chopped onion, minced garlic, and sliced mushrooms to the slow cooker.
Step 5: In a medium bowl, whisk together the beef broth, Worcestershire sauce, tomato paste (if using), garlic powder, onion powder, dried thyme, and additional salt and pepper to taste. Pour this mixture over the ingredients in the slow cooker.
Step 6: Add the bay leaves. Stir everything gently to combine.
Step 7: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is fork-tender.
Step 8: Approximately 30-60 minutes before serving, if you desire a thicker sauce, prepare a cornstarch slurry by whisking cornstarch with cold water until smooth. Stir the slurry into the slow cooker. Cover and cook for another 30-60 minutes, or until the sauce has thickened to your liking.
Step 9: Remove the bay leaves. Ladle the slow cooker beef tips and mushrooms over mashed potatoes, rice, or noodles. Garnish with fresh parsley if desired, and serve hot.
Notes
