Slow Cooker Chickpea Noodle Soup

Description

A comforting, hearty, and easy-to-make plant-based alternative to traditional chicken noodle soup, packed with savory vegetables and protein-rich chickpeas.


Ingredients

2 tbsp olive oil
1 large onion, chopped
2 large carrots, peeled and sliced
2 celery stalks, sliced
4 cloves garlic, minced
2 (15-ounce) cans chickpeas, drained and rinsed
8 cups low-sodium vegetable broth
1 tsp dried thyme
1/2 tsp dried rosemary
1 bay leaf
1/2 tsp black pepper
1 tsp salt, or to taste
2 cups egg noodles (or gluten-free pasta)
3 cups fresh spinach
Fresh parsley, chopped (for garnish, optional)


Instructions

Step 1: Lightly spray the inside of your slow cooker with cooking spray or grease with a little olive oil to prevent sticking.
Step 2: Add the chopped carrots, celery, onion, garlic, and drained and rinsed chickpeas to the slow cooker.
Step 3: Pour in the vegetable broth, then add the dried thyme, dried rosemary, bay leaf, salt, and black pepper. Stir gently to combine all the ingredients.
Step 4: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender and the flavors have melded beautifully.
Step 5: With about 30 minutes left of cooking time, remove the bay leaf. Stir in the egg noodles and the fresh spinach. Replace the lid and continue to cook until the noodles are al dente and the spinach has wilted.
Step 6: Taste and adjust seasoning as needed. You might want to add a little more salt or pepper, or even a splash of lemon juice for brightness.
Step 7: Ladle the warm soup into bowls and garnish with fresh parsley, if desired. Serve immediately and enjoy!

Notes

For a richer broth, you can sauté the onion, carrots, and celery in olive oil on the stovetop before adding them to the slow cooker. This step is optional but adds another layer of flavor. Ensure noodles are al dente to avoid mushiness. This soup freezes well without the noodles; add freshly cooked noodles when reheating.
