1/2 tsp black pepper, or to taste
1 cup low-sodium chicken or turkey broth
1 large onion, chopped
2 cloves garlic, minced

Instructions

Step 1: Pat the turkey breast dry with paper towels. In a small bowl, combine the garlic powder, onion powder, dried thyme, dried rosemary, dried sage, salt, and black pepper. Rub this spice mixture all over the turkey breast, ensuring it's evenly coated.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Sear the seasoned turkey breast for 2-3 minutes per side until golden brown. This step is optional but highly recommended as it locks in flavor.
Step 3: Place the chopped onion in the bottom of your slow cooker. This layer of onion adds flavor and helps prevent the turkey from sticking.
Step 4: Carefully transfer the seared turkey breast to the slow cooker, placing it on top of the onions. Add the minced garlic around the turkey. If using fresh herb sprigs, tuck them alongside the turkey.
Step 5: Pour the chicken or turkey broth over and around the turkey breast. Ensure there's enough liquid to cover the bottom of the slow cooker.
Step 6: Cover your slow cooker with the lid. Cook on low for 3-4 hours, or on high for 2-3 hours, or until the internal temperature of the turkey reaches 165°F (74°C). Cooking times can vary, so always check for doneness.
Step 7: Once cooked, carefully remove the turkey breast from the slow cooker and transfer it to a cutting board. Tent it loosely with foil and let it rest for at least 10-15 minutes before slicing or shredding. This resting period is crucial for allowing the juices to redistribute.
