Description

2 large English cucumbers (or 4-5 Persian cucumbers)
1 tsp salt (for drawing out water)
4-5 cloves garlic, minced

1-2 tsp chili oil (adjust to taste, optional)
1 tsp sugar
1 tbsp toasted sesame seeds (for garnish)

Instructions

Step 1: Prepare the cucumbers. Wash and dry the cucumbers. Place them on a sturdy cutting board. Using the flat side of a heavy chef's knife, a rolling pin, or a meat mallet, gently but firmly smash each cucumber until it cracks and breaks into irregular pieces. Roughly chop the smashed cucumbers into bite-sized pieces.
Step 2: Salt and drain the cucumbers. Transfer the chopped cucumbers to a colander. Sprinkle with 1 teaspoon of salt and toss gently to coat. Let them sit for 15-20 minutes to draw out excess water. After draining, gently squeeze out any remaining liquid and pat them dry with paper towels.
Step 3: Make the dressing. While the cucumbers are draining, in a small bowl, combine the minced garlic, soy sauce, rice vinegar, toasted sesame oil, chili oil (if using), and sugar. Whisk well until the sugar is dissolved and the dressing is fully combined.
Step 4: Combine salad ingredients. In a medium mixing bowl, add the drained and patted-dry cucumbers. Pour the prepared dressing over the cucumbers. Toss gently to ensure all cucumber pieces are evenly coated.
