Description

A comforting, easy-to-make, one-pan smoked sausage and potatoes skillet with bell peppers and onions, perfect for a quick weeknight dinner or a hearty breakfast. Full of flavor and minimal cleanup!

1 tbsp olive oil (or preferred cooking oil), plus more if needed
1 lb smoked sausage (Kielbasa or Andouille), sliced into 1/2-inch rounds
1.5 lbs potatoes (Yukon Gold or red potatoes), diced into 3/4-inch cubes
1 large onion, chopped
2 bell peppers (any color), chopped
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp dried thyme
Salt and black pepper to taste
Fresh chopped parsley or chives for garnish (optional)


Instructions

Step 1: Prepare your ingredients by slicing the smoked sausage, dicing the potatoes, and chopping the onion and bell peppers into uniform, bite-sized pieces.
Step 2: Heat 1 tablespoon of olive oil in a large (12-inch or larger) cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering.
Step 3: Add the sliced smoked sausage to the hot skillet in a single layer. Cook for 3-5 minutes, stirring occasionally, until the sausage is nicely browned and slightly crispy. Remove the sausage from the skillet and set aside, leaving any rendered fat in the pan.
Step 4: Add the diced potatoes to the skillet. If the pan seems dry, add another tablespoon of oil. Spread the potatoes into a single layer and cook undisturbed for 5-7 minutes to allow them to brown and crisp up on one side.
Step 5: Stir the potatoes, then add the chopped onion and bell peppers to the skillet. Season generously with garlic powder, smoked paprika, dried thyme, and salt and black pepper. Mix everything well.
Step 6: Reduce the heat to medium-low, cover the skillet, and cook for 10-15 minutes, stirring every 3-4 minutes, until the potatoes and vegetables are tender. Check for doneness by piercing a potato cube with a fork.
Step 7: Once the potatoes are tender, remove the lid. Increase the heat to medium-high and return the browned smoked sausage to the skillet. Cook for another 5-7 minutes, stirring frequently, until any excess moisture has evaporated and the potatoes and vegetables are beautifully caramelized and slightly crispy.
Step 8: Taste and adjust seasonings as needed. Garnish with fresh chopped parsley or chives if desired, and serve your delicious smoked sausage and potatoes skillet hot.

Notes

For crispier potatoes, ensure your skillet is hot and avoid overcrowding. You can also par-boil the potatoes for 5-7 minutes before dicing and adding to the skillet to reduce overall cooking time.
