Description

1.5 lbs small waxy potatoes (such as Yukon Gold or red potatoes), scrubbed and cut into ½-inch cubes

14-16 oz fully cooked smoked sausage (like kielbasa or andouille), sliced into ½-inch rounds or half-moons
1 teaspoon garlic powder
½ teaspoon paprika
Salt and freshly ground black pepper to taste
Fresh parsley or green onions, chopped, for garnish (optional)


Instructions

Step 1: Heat a large skillet (cast iron works great!) over medium-high heat and add 1 tablespoon of olive oil. Once shimmering, add the cubed potatoes. Spread them in a single layer, avoiding overcrowding the pan. Cook for 8-10 minutes, stirring occasionally, until they start to brown and become tender. Let them sit undisturbed for a few minutes between stirs to develop that beautiful golden-brown crust. If your pan is too crowded, work in batches.
Step 2: Push the cooked potatoes to one side of the skillet, or remove them temporarily to a plate. Add another drizzle of olive oil if needed to the empty side. Add the chopped onions and bell peppers to the hot pan. Sauté for 3-5 minutes, until they begin to soften and become fragrant.
Step 3: Add the sliced smoked sausage to the pan with the onions and peppers. Cook for another 5-7 minutes, stirring occasionally, until the sausage is nicely browned and heated through. The edges might get a little crispy – this enhances the flavor.
Step 4: Once the sausage and vegetables are cooked, combine them with the potatoes in the skillet. Stir everything together gently to mix. Sprinkle in the garlic powder, paprika, salt, and black pepper. Taste and adjust seasonings as needed. Seasoning in layers ensures every component is flavorful.
