Ingredients
2 cups heavy whipping cream, chilled
1 can (14 oz) sweetened condensed milk
3 large overripe bananas, mashed
1 teaspoon pure vanilla extract
1/2 teaspoon lemon juice
1.5 cups vanilla wafers, crushed
1/8 teaspoon sea salt
Instructions
Step 1: Chill a large metal mixing bowl and beaters in the freezer for 15 minutes before starting.
Step 2: Mash the bananas with lemon juice, vanilla, and salt in a small bowl until mostly smooth.
Step 3: Whip the heavy cream in the chilled bowl until stiff peaks form.
Step 4: Fold in the sweetened condensed milk gently to maintain the cream's volume.
Step 5: Incorporate the mashed banana mixture and the crushed vanilla wafers into the base.
Step 6: Pour into a loaf pan, top with extra wafers, and freeze for 6-8 hours until set.
Notes
