Description
A refreshing tropical cake with a creamy yogurt filling and a zesty passion fruit glaze inspired by the famous ice cream.
Ingredients
3 large eggs
100g granulated sugar
100g all-purpose flour
1 tsp baking powder
500g Greek yogurt
400ml heavy whipping cream
2 packets cream stabilizer
500ml passion fruit juice
2 packets vanilla sauce powder (no-cook)
Instructions
Step 1: Beat eggs and sugar for 5 minutes until fluffy.
Step 2: Fold in flour and baking powder, then bake at 180°C for 20 minutes.
Step 3: Whip cream with stabilizer and fold into yogurt and sugar.
Step 4: Spread cream over the cooled base and chill for 2 hours.
Step 5: Mix juice with sauce powder and pour over the cream layer.
Step 6: Chill for at least 4 hours before serving.
Notes
Always ensure the cake base is completely cold before adding the cream layer.
