Description

A classic, crusty, and airy artisan sourdough bread recipe that guides you from an active starter to a perfect loaf, perfect for any home baker looking to master foundational sourdough recipes.

100g active sourdough starter (fed 4-12 hours prior)
350g warm filtered water (90-95°F / 32-35°C)
500g strong bread flour (12-14% protein)
10g fine sea salt


Instructions

Step 1: In a large bowl, combine the active sourdough starter, warm filtered water, and bread flour. Mix with a spoon or your hands until no dry spots of flour remain. Cover with a damp cloth or plastic wrap and let it rest for 30 minutes to 1 hour (autolyse).
Step 2: After the autolyse, sprinkle the sea salt over the dough. Using wet hands, gently incorporate the salt by squeezing and folding the dough for about 2-3 minutes until slightly more cohesive.
Step 3: Over the next 3-4 hours, perform 3-4 sets of 'stretch and folds' every 30-45 minutes. To do this, wet your hand, grab a portion of the dough, stretch it upwards, and fold it over itself towards the center. Rotate the bowl 90 degrees and repeat 3-4 times.
Step 4: After the final stretch and fold, cover the bowl and let the dough continue to bulk ferment at room temperature (ideally 72-78°F or 22-25°C) until it has increased in volume by 30-50% and looks bubbly (4-8 hours).
Step 5: Gently turn the dough out onto a lightly floured surface. Lightly dust the top and bottom of the dough with flour. Gently shape it into a loose round or rectangle, then let it rest, uncovered, for 20-30 minutes (pre-shaping).
Step 6: Gently shape the dough into its final desired shape (boule or batard), creating surface tension. Dust a proofing basket (banneton) generously with rice flour. Carefully transfer the shaped dough, seam-side up, into the banneton.
Step 7: Cover the banneton with a plastic bag or reusable cover and place it in the refrigerator for 12-18 hours (cold fermentation).
Step 8: Preheat your oven to 475°F (245°C) with a Dutch oven inside for at least 45-60 minutes.
Step 9: Carefully remove the hot Dutch oven. Gently invert the cold dough from the banneton directly into the Dutch oven. Score the top of the dough with a sharp razor blade or lame.
Step 10: Cover the Dutch oven and bake for 20 minutes.
Step 11: Remove the lid and continue baking for another 25-35 minutes, or until the crust is deeply golden brown and sounds hollow when tapped (internal temperature 200-210°F / 93-99°C).
Step 12: Carefully remove the baked loaf from the Dutch oven and place it on a wire rack to cool completely for at least 1-2 hours before slicing.
