Description
Transform ordinary corn on the cob into extraordinary, finger-licking corn ribs, seasoned with a spicy garlic parmesan blend and air-fried to crispy perfection.
Ingredients
4 ears fresh corn on the cob, husked and cleaned
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1 tablespoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste for spice)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Carefully cut each ear of corn into 'ribs'. Stand the corn upright on a sturdy cutting board. Using a sharp, heavy chef's knife, slice down the center lengthwise to halve the corn. Lay each half flat-side down and slice lengthwise again into 2-3 narrower 'ribs' (each ear yields 4-6 ribs). Be very careful, as corn can be difficult to cut.
Step 2: In a large bowl, combine the olive oil, grated Parmesan cheese, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.
Step 3: Add the corn ribs to the bowl and toss thoroughly until each piece is evenly coated with the seasoning mixture.
Step 4: Preheat your air fryer to 375°F (190°C).
Step 5: Arrange the seasoned corn ribs in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches.
Step 6: Air fry for 15-20 minutes, shaking the basket halfway through, until the corn is tender, lightly charred, and curled into a 'rib' shape.
Step 7: Transfer the cooked corn ribs to a serving platter. Garnish with fresh chopped parsley before serving immediately.
Notes
For extra crispiness, you can broil for the last 1-2 minutes. Adjust cayenne pepper for desired heat.
