Description
A refreshing and elegant spring dessert featuring macerated strawberries and a rich, aromatic vanilla bean cream.
Ingredients
2 lbs fresh strawberries, hulled and quartered
3/4 cup granulated sugar, divided
1 vanilla bean, scraped (or 2 tsp vanilla bean paste)
1 cup heavy whipping cream, chilled
1/4 tsp salt
Optional: Fresh mint for garnish
Instructions
Step 1: Wash, hull, and quarter the fresh strawberries, placing them into a large non-reactive mixing bowl.
Step 2: Sprinkle the berries with 1/2 cup of granulated sugar and the seeds scraped from one vanilla bean. Stir gently to combine.
Step 3: Let the strawberry mixture sit at room temperature for 30 minutes to macerate and develop a natural syrup.
Step 4: In a chilled mixing bowl, combine the heavy whipping cream, the remaining 1/4 cup of sugar, and a pinch of salt.
Step 5: Whip the cream using an electric mixer until medium-to-stiff peaks form, being careful not to over-beat into butter.
Step 6: To assemble, layer the macerated strawberries and the vanilla cream into four serving glasses, ensuring some syrup is drizzled into each layer.
Step 7: Garnish with a sprig of fresh mint if desired and serve immediately for the freshest flavor.
Notes
Using vanilla bean paste instead of extract provides the classic black specks that make this Spring Strawberry Dessert with a Vanilla Twist look professional.
