2 lbs fresh strawberries, hulled and quartered
3/4 cup granulated sugar, divided
1 vanilla bean, scraped (or 2 tsp vanilla bean paste)
1 cup heavy whipping cream, chilled
1/4 tsp salt

Instructions

Step 1: Wash, hull, and quarter the fresh strawberries, placing them into a large non-reactive mixing bowl.
Step 2: Sprinkle the berries with 1/2 cup of granulated sugar and the seeds scraped from one vanilla bean. Stir gently to combine.
Step 3: Let the strawberry mixture sit at room temperature for 30 minutes to macerate and develop a natural syrup.
Step 4: In a chilled mixing bowl, combine the heavy whipping cream, the remaining 1/4 cup of sugar, and a pinch of salt.
Step 5: Whip the cream using an electric mixer until medium-to-stiff peaks form, being careful not to over-beat into butter.
