Ingredients
1 lb fresh strawberries, hulled
1 lb ripe tomatoes, chopped
1 English cucumber, chopped
1 red bell pepper, chopped
1/2 small red onion, diced
1 clove garlic, minced
2 tbsp sherry vinegar
1/4 cup extra virgin olive oil
1 tsp sea salt
1/2 tsp black pepper
Fresh basil for garnish
Instructions
Step 1: Clean and chop the strawberries, tomatoes, cucumber, and bell pepper into manageable pieces for blending.
Step 2: Place all prepared fruits and vegetables, including the garlic and onion, into a high-speed blender.
Step 3: Blend on high until the mixture is smooth. Slowly stream in the olive oil and vinegar while blending at a lower speed.
Step 4: Season with salt and pepper, then transfer the mixture to a glass container.
Step 5: Chill in the refrigerator for at least 2 hours to allow the flavors to develop.
