Zesty lemon cake squares infused with strawberry puree and topped with a tart lemon glaze.
Ingredients
1 box (15.25 oz) lemon cake mix
1/2 cup fresh strawberry puree
3 large eggs
1/2 cup vegetable oil
1 cup water
2 tbsp lemon zest
2 cups powdered sugar
3 tbsp fresh lemon juice
Instructions
Step 1: Preheat oven to 350°F and grease a 9x13 inch baking pan.
Step 2: Whisk the lemon cake mix, eggs, oil, and water in a large bowl until smooth.
Step 3: Gently swirl in the strawberry puree and 1 tablespoon of the lemon zest.
Step 4: Pour into the pan and bake for 18-22 minutes until a toothpick comes out clean.
Step 5: Cool completely, then cut the cake into 24 small squares.
Step 6: Whisk powdered sugar and lemon juice together to make a glaze.
Step 7: Dip each cake square into the glaze and top with the remaining lemon zest.
Notes
Ensure strawberry puree is seedless for the best texture.
