Ingredients
2 lbs fresh strawberries, hulled and sliced

1/2 cup (1 stick) unsalted butter, very cold and cubed
3/4 cup cold heavy cream (for shortcakes), plus more for brushing
1 1/2 cups very cold heavy cream (for whipping)

Instructions
Step 1: Gently wash and hull the strawberries. Slice them into halves or quarters, depending on their size.
Step 2: Place sliced strawberries in a medium bowl. Sprinkle with 1/4 cup granulated sugar and a tiny pinch of salt. Gently toss to combine and let them macerate at room temperature for at least 30 minutes, or up to 2 hours.
Step 3: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
Step 4: In a large bowl, whisk together the 2 cups all-purpose flour, 1/4 cup granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
Step 5: Add the 1/2 cup very cold, cubed unsalted butter to the dry ingredients. Use a pastry blender, two knives, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
