Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup whole milk
1 pound fresh strawberries, hulled and halved
2 tablespoons sugar for topping
Instructions
Step 1: Preheat oven to 350°F and grease a 10-inch cast iron skillet.
Step 2: Cream butter and 1 cup sugar until light and fluffy.
Step 3: Beat in the egg and vanilla extract until smooth.
Step 4: Whisk together flour, baking powder, and salt.
Step 5: Alternately add dry ingredients and milk to the butter mixture, beginning and ending with flour.
Step 6: Spread batter into the skillet and top with halved strawberries.
Step 7: Sprinkle with the remaining 2 tablespoons of sugar.
Step 8: Bake for 35-40 minutes until golden and set.
Step 9: Cool slightly in the skillet before serving.
