Lemon-Herb Summer Pasta with Burst Cherry Tomatoes

Description

A vibrant and light pasta dish featuring sweet burst cherry tomatoes, fresh basil, zesty lemon, and a hint of garlic, perfect for warm summer days. One of the easiest and most flavorful summer pasta recipes.


Ingredients

Scale

1 pound spaghetti, linguine, or fettuccine
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
2 pints (about 4 cups) cherry or grape tomatoes, halved
Zest of 1 lemon
2 tablespoons fresh lemon juice
4 ounces fresh mozzarella pearls (bocconcini), drained and halved (optional)
1/2 cup fresh basil leaves, roughly chopped, plus extra for garnish
1/2 cup grated Parmesan cheese, plus extra for serving
Salt and freshly ground black pepper to taste
1 cup reserved pasta water


Instructions

Step 1: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta.
Step 2: While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.
Step 3: Add the halved cherry tomatoes to the skillet. Cook, stirring occasionally, for 8-10 minutes, or until the tomatoes begin to burst and release their juices. Use the back of a spoon or a spatula to gently press down on some of the tomatoes to help them along.
Step 4: Stir in the lemon zest and lemon juice. Add the drained pasta to the skillet with the tomatoes. Toss to combine, ensuring every strand is coated in the flavorful sauce.
Step 5: Gradually add about 1/2 cup of the reserved pasta water, stirring continuously. Continue adding pasta water, a tablespoon at a time, until the sauce reaches your desired consistency – luscious but not watery.
Step 6: Remove the skillet from the heat. Stir in the fresh mozzarella pearls (if using) and most of the fresh basil leaves. Season generously with salt and freshly ground black pepper to taste.
Step 7: Serve immediately, garnished with extra fresh basil, a sprinkle of Parmesan cheese, and an additional drizzle of good quality olive oil.

Notes

For an extra layer of flavor, roast the cherry tomatoes for 10-15 minutes at 400°F (200°C) before adding them to the skillet. This intensifies their sweetness and creates a deeper sauce. You can also add grilled chicken or shrimp for a heartier meal.
